$5.25/lb hanging weight + processing
Your exact total will vary based on the animal's hanging weight and your processing selections.
Don't worry. We'll walk you through it.
Buying half a cow can sound a little intimidating if you've never done it before.
It really isn't.
One of our goals at HCC is to make buying directly from a farmer simple, transparent and easy to understand.
We'll walk you through the process, explain what you're paying for and help you navigate your processing choices.
Don't worry. We'll walk you through it.
After processing begins, the carcass is weighed before it is broken down into individual steaks, roasts and ground beef.
That number is called the hanging weight.
Your HCC beef price is calculated based on your portion of that hanging weight.
Your final take-home weight will be lower because bone, excess fat and other portions are removed during processing.
SO WHAT AM I ACTUALLY PAYING FOR?
There are two primary costs:
-
🥩 Your HCC Beef — $5.25/lb hanging weight
-
🔪 Processing — the cost of professionally cutting and packaging your beef
Every animal is different, so exact totals will vary.
We'll make sure you understand the process before it's time to fill your freezer.
-
This is the fun part.
Buying a half cow means getting a variety of cuts, not just a giant freezer full of ground beef.
Depending on your processing selections, your beef may include:
-
🥩 Steaks
-
🍔 Ground Beef
-
🥘 Roasts
-
🍖 Short Ribs
-
🔥 Brisket
-
🍲 Stew Meat
-
🥩 Specialty Cuts
-
🦴 Bones and other requested cuts
And one of the best parts?
YOU GET A SAY IN HOW YOUR BEEF IS CUT.
Before processing, you'll complete a custom cut sheet.
Depending on the processor's available options, you'll make choices about things like:
Steak thickness • Roast sizes • Ground beef packaging • Specialty cuts • Bones & more
Never filled out a cut sheet before?
That's completely fine. We'll help you.

How We Raise Our Cattle.
Transparency matters to us.
Our cattle are never confined to a feedlot.
They have access to pasture along with a large barn for shelter, multiple water sources and hay as needed.
But transparency at HCC means more than putting a paragraph on our website telling you everything is great.
We actually show you.
We share Farm Life.
We share the cattle.
We share the good days, the work, the funny moments and what raising cattle actually looks like.
And our beef customers get the opportunity to come to the farm and see it firsthand.
-
Meet the cattle.
-
See where they live.
-
Ask questions.
-
Get up close.
-
Learn about how they're raised.
We believe that when you buy food directly from a farmer, you should be able to know your farmer, see the farm and understand where your food came from.

Homegrown Beef FAQ
Every animal is different, but a half cow typically provides approximately 210–260 lbs of take-home beef.
Your final amount depends on the animal itself and the processing selections you make.
Hanging weight is the weight of the carcass before it is broken down into individual cuts.
Your HCC beef price is based on your share of the hanging weight, not the final number of pounds that go into your freezer.
During processing, bone, excess fat and other portions are removed.
Your cut selections also affect your final take-home weight.
Yes!
You'll complete a custom cut sheet before processing.
And if you've never filled one out before, we'll help you through it.
Our cattle are professionally processed at Sudlersville Meat Locker in Sudlersville, Maryland.
A half cow is a substantial amount of beef, so you'll want dedicated freezer space available before pickup.
We'll help you understand what to expect ahead of time so you can be prepared.
YES!
And this is one of our favorite parts of the HCC beef experience.
Customers who reserve HCC beef are invited to the farm for a private beef-customer tour before butcher day.
You'll have the opportunity to get up close with the cattle, see where they're raised, learn about their care, ask questions and experience the farm behind your food.
You don't just have to take our word for it.
Come see for yourself.

❤️ FROM OUR FARM TO YOUR FAMILY
